8 Ingredient REAL FOOD Snacking Muffins
Did you know that most store-bought muffins contain more sugar than a piece of cake? Yep.. INGREDIENTS matter!

These muffins are the perfect grab-& -go snack. They are family-friendly (my entourage of nieces & nephews LOVE them), easy to prep ahead, and work great for traveling, lunch boxes, or even pre/ post - workout snacks.
(ADDED BONUS- they are totally NUT FREE so can be incorporated into school lunches as well)

Now, for these delicious muffins..
Here's what you will need:
5 Eggs
2 Bananas
1 cup roasted acorn squash (you can also use roasted sweet potato or pumpkin here)
1 cup shredded zucchini
1.5 tsp pure vanilla extract
1/2 cup coconut flour
1 tsp baking soda
1 tsp cinnamon
Directions:
Pre-heat oven to 350 degrees and line muffin tins with baking cups
Add eggs and bananas to a food processor or blender until bananas or well mixed
Add all other ingredients and process until well combined and smooth. Be sure to squeeze excess liquid out of zucchini using a towel or paper towel first.
Spoon batter into lined muffin tins
Bake for about 30 -32 minutes
A few notes:
If you don't have a food processor, simply mash bananas with a fork. You will combine wet ingredients together before adding dry if using a mixer or whisk.
These muffins will store in the fridge for about 5 -6 days. You can freeze them in an air tight container for months!
You can also add dark chocolate chips, cacao nibs, Goji berries, or any type of nut/ seed if desired to change it up a bit
