Roasted Harvest Salad

By far one of the best things about fall is the endless options to make DELICIOUS meals with seasonal ingredients.

This big , hearty seasonal salad is the perfect example of a bowl your whole body will LOVE.

I love (balanced) salads / bowls for gut health, and hormones. But they are also supportive to BLOOD SUGAR regulation (which is KEY in reducing stress both internally + externally).

For blood sugar + stress:

  • If you have high stress, feel burnout, struggle with anxiety ,  or face any  hormonal symptoms/ imbalances -  The main goal is to keep blood sugar stable throughout the day. Roasted Harvest Salad

What you need (serves 1) :

  • 2-3 cups kale (chopped)

  • 1 beet (about 1/2 cup chopped)

  • 1/2 cup brussels sprouts (cooked and chopped)

  • 1/2 cup chopped sweet potato (cooked)

  • 2 tbsp pumpkin seeds

  • 1 tbsp pecans

  • 2 tbsp feta cheese (optional)

  • 1/2 garlic clove (small)

  • 2 tbsp tahini paste

  • 1/2 lemon (juice)

  • 1.5 tsp olive oil (extra virgin/ cold pressed)

  • sea salt / pepper (to taste)

  • 1 tbsp water

What you do:

  • Roast / cook beets, brussels sprouts, and sweet potatoes until fully cooked. Season as desired

  • Chop kale and add to large bowl with olive oil and lemon juice. Massage kale leaves to soften slightly

  • In a separate bowl combine tahini paste, water, salt and pepper

  • Add roasted veggies to bowl with kale leaves. Top with feta cheese, pecans, pumpkin seeds, and tahini dressing

  • Enjoy!
