Warming Chicken Lunch Bowl

It’s no surprise that nutrition really is the BACKBONE to your whole health - Hormones + beyond. 

I mean the food, vitamins, minerals, and nutrients  you put into your body are literally the sources of FUEL that allow it to function ..  the grease to lubricate the wheels of your body and help all the chemical reactions in the body to run properly.. IF they are provided, digested, and absorbed.

This Warming Chicken Lunch Bowl is an adapted recipe from my Real Food Reset recipe book (found via the online program). It contains a combination of protein, fat, fiber, and color making it a well-balanced meal that will support blood sugar balance, digestion, energy, and moods!

What you need: 

  • 1/4 head Cauliflower (1-2 cup chopped)

  • 1 tbsp Avocado Oil (divided)

  • 4 ozs Chicken Breast (skinless, boneless)

  • 1/4 tsp Sea Salt & Black Pepper

  • 1 cup Kale Leaves (thinly sliced)

  • 1/2 Lemon (juiced)

  • 1/4 Avocado (sliced)

  • 1/16 tsp Cayenne Pepper (dash )

  • 1/4 tsp Garlic Powder

  • 1/2 Cup chopped parsnips

What you do: 

  • Preheat oven to 375ºF and line a baking sheet with parchment paper.

  • Toss the chopped cauliflower and chopped parsnips in avocado oil and transfer to a baking sheet along with the chicken breasts. Sprinkle everything with sea salt, pepper, cayenne, and garlic powder

  • Place the baking sheet in the oven for 30 minutes, or until chicken is cooked through. Toss the cauliflower and root veggies at the halfway point.

  • While that is cooking, massage the kale with lemon juice and avocado oil.

  • Remove the chicken and cauliflower from the oven and place on top of the kale. Add avocado slices and enjoy!
