Kid- Friendly Sweet Potato Shepard’s Pie
A strong nutritional foundation is the initial step that should always be looked at when you are presented with symptoms.. But it's often the most COMMONLY missed piece.
The symptoms of nutritional imbalances quickly become “normal” in your everyday life and you end up learning to “just deal with them”. BUT.. without a proper foundation, ALL areas of your health can become affected.
This Sweet Potato Shepard’s Pie is an example of how SIMPLE it can be to throw together a hormone nourishing, balanced meal that is meal prep friendly, easy to re-purpose, loved by kids, and delicious!
Here are the details:
What you need:
1 Sweet Potato (4 cups chopped )
2 tbsps Avocado Oil
1 tbsp Canned Coconut Milk
1 cup Yellow Onion
2 lbs Extra Lean Ground Meat of choice
3 Garlic cloves
1 cup Celery (diced)
1 cup Carrot (diced)
1/2 cup Corn
1/2 cup Frozen Peas
1 tsp Sea Salt
1/2 tsp Black Pepper
1 tsp Dried Thyme
2 tsps Oregano
What you do:
Preheat your oven to 350
Chop sweet potatoes and boil in a large pot over high heat. Boil until they are soft (8-10 mins)
Once potatoes are soft, drain. Add coconut milk, and 1 TBSP oil and mash well.
Heat a large skillet and add the remaining 1 TBSP oil. Add ground meat and cook 5-6 minutes.
Add onions, celery, garlic, carrots, corn, peas, salt, pepper, and spices. Cook until meat is cooked through.
Transfer meat mixture to a baking dish and spread evenly.
Add mashed sweet potatoes on top and spread evenly
Bake uncovered in oven for about 30 minutes
Allow to cool before serving!

This recipe is one of my favorite dishes to make ahead of time in large batch and re-purpose throughout the week for quick + easy meals.

Simply as is - YUMM!
Enjoy in a collard green wrap or lettuce boat with avocado dressing
Enjoy over a base of leafy greens
Add tomato sauce and sauté to create a sloppy joe consistency (serve with a whole foods bun if desired)
